Rationale: The high fat, moderate protein and low carbohydrate ketogenic diet is a longstanding treatment option for intractable epilepsy. Cited barriers in utilization of this treatment option include perceived complexity of the diet, palatability, food allergies or preferences and compliance. Methods: To identify and explain the role of a Chef Educator in the ketogenic diet program Results: The Chef Educator's role is to work in tandem with pediatric clinical dietitians to convert the science of nutrition and dietary modifications into the art/science of cooking for patients and families in individual and group settings. In the administration of the ketogenic diet, this includes making meals more palatable, adapting meals to consider food allergies and cultural preferences and providing educational sessions. During the clinic visit prior to initiation, the Chef Educator determines likes/dislikes, creates sample menus that mimic favorite foods/meals, and assists caregivers in introducing and administering appropriate fats into the current diet. During initiation of the diet, the Chef Educator assists in meal planning and preparation specific to the patient and supports the caregiver in weighing and preparing foods. During follow up clinic visits, the Chef Educator provides practical cooking tips and individualized recipes that ultimately equip caregivers with the tools necessary to navigate this complex diet regimen. The Chef Educator provides ongoing group education sessions for caregivers on topics such as cooking, baking and recipe development. Conclusions: The addition of a Chef Educator to the multidisciplinary epilepsy team increases the span of potential ketogenic diet candidates, improves palatability and compliance and provides a nonclinical partner in the medical team.
